Is the Human race confirmed?
Yes. Human was one of two races available in the earliest Dimraeth playtests, paired with Minotaur, before the game had a public demo.
What's known so far
A Mudtek developer's rundown of the race roster in a Steam Community thread grouped Human with the "conventional" fantasy options, alongside Elf and Dwarf — as opposed to less conventional choices like Minotaur, Centaur, Golem, Fairy, Troll and Griffon. In world-building terms, Humans anchor the Kingdom of Aldoria, one of the two powers bordering Earlwood Village, Dimraeth's opening region, and Humans are also named among the outcasts who settled Earlwood itself.
What's not known yet
Mudtek hasn't published a distinct combat identity for Human the way it has for Minotaur (heavy melee) or Fairy (staff caster) — it's reasonable to expect Human plays as a flexible baseline race, but that hasn't been stated outright, so this page won't claim it until it is.
